Key Lime Flip

Ohhhhh boy! Welcome summer. This simple concoction magically recreates the flavor of key lime pie—one of my all time favorite desserts. Plus, who wouldn’t want to drink/serve a cocktail this gorgeous? There is something so seductive about a slender stem of alcohol that tastes like a sinful dessert. Talk about multi-tasking!
I serve this either before dinner to get people excited about what’s to come, or after dinner with one of Theo Chocolate’s Hazelnut Gianduja Confections (milk chocolate and caramel dusted with sea salt) .

Key Lime Pie Cocktail Recipe
Makes 8 cocktails
- 1 lime
- 1/2 cup crushed Health Valley graham cracker crumbs
- 1/2 cup fresh lime juice (key lime would be wonderful)
- 1/2 cup superfine sugar
- 12 ounces (1 1/2 cups) vanilla-infused vodka (or vodka with a dash of vanilla extract)
- 12 ounces (1 1/2 cups) light rum
- 3/4 cup natural coconut milk (with solids at top of can mixed in)
- Moisten the rim of chilled martini or parfait glasses with a sliced lime, then press the glasses into a saucer of the graham cracker crumbs to coat.
- Combine the sugar and lime juice in a pitcher until the sugar is completely melted. Add the remaining liquid ingredients to the pitcher with lots of ice. Stir to blend and chill.
- Strain into the rimmed glasses and serve.
