Bourbon Barbecue Sauce
Serve this delicious sauce over barbecue ribs, chicken, or burgers. For great ribs or chicken, marinate the meat in this sauce for several hours before baking. For a smoky taste, finish for a few minutes on the grill (not too long or it will char due to all of the sugars in the sauce). For barbecue burgers, brush the sauce on top of the burgers on the grill, adding more when assembling the burger on the bun.
Makes about 2 cups
- 1/2 cup minced onion
- 1 jalapeno, seeded and minced
- 1 tablespoon minced garlic
- 3 tablespoons vegetable or olive oil
- 2 cups ketchup
- 1/2 cup light molasses
- 1/2 cup Jack Daniel’s bourbon
- 2 tablespoons Tabasco sauce
- 2 tablespoons Worcestershire sauce
- 2 teaspoons paprika
- Heat the olive oil over medium-high heat in a large heavy-bottomed saucepan. Add the onions and sauté until they begin to soften. Add the garlic and jalapeno. Continue to sauté until onions turn golden.
- Add the remaining ingredients, stir to mix, and bring to a boil. Reduce the heat to medium, cover, and simmer 25 minutes, stirring occasionally. The finished sauce should be thick.
